This is not baklava as you know it. And it is not a croissant as you expect it. It is something entirely its own, a slow, deliberate union of two of the world's most beloved baked goods, crafted for those who believe dessert should be an experience, not an afterthought.
We begin with a classic laminated croissant dough, hand-folded over days to build hundreds of paper-thin, butter-rich layers. Rather than shaping it into a crescent, we press it flat and layer it the way a Levantine baker layers phyllo: sheet upon golden sheet, each one separated by a generous spread of spiced almond cream made from whole roasted almonds, a whisper of cinnamon, and raw cane sugar.
Once baked to a deep, shattering amber, the whole piece is drenched while still hot in a fragrant syrup of wildflower honey and orange blossom water, allowing every layer to absorb just enough sweetness without losing its crunch. The result is a treat that crackles at the first bite, gives way to a soft, nutty interior, and lingers with a floral honey finish long after the last piece is gone.
